Grapes were hand-picked over 15 days from four select clones across six blocks spanning three individual vineyard sites. This diversity of source, rising from the central valley floor to the higher, cooler, later-ripening upper Yarra, allows for a wine that transcends the personality of any single vineyard. Combining volume, intensity and weight with focus, elegance and restraint, this enticing slow-building fuller-bodied Chardonnay is the meeting of individual strengths and site expressions. It leads with an aromatic intensity of tangerine, sumac, fennel pollen, makrut leaf, chamomile, bread dough, spun sugar, crème anglaise and gun smoke, underpinned by grapefruit pith, slate and petrichor. The complex, textural palate delivers richness with precision, unfurling into a long and persistent finish that speaks to both the power and refinement of the region. As with all Optume wines, decanting when young is advised to fully reveal the wine’s nuance and intensity. All fruit was hand-sorted and whole-bunch pressed, with the cloudy juice settled overnight before being transferred to a mix of concrete tulip tanks and select French oak barrels (55% new).\u003c\/p\u003e\n\u003cdiv class=\"acc-content show\" style=\"max-height: 250px;\"\u003e\n\u003cdiv class=\"product-single__description rte\"\u003e\n\u003cdiv class=\"wrap\"\u003e\n\u003cp\u003eNatural fermentation commenced prior to inoculation with a specific varietally-enhancing yeast strain. The finished wines were matured on lees with minimal stirring for 12 months, before selection and blending in 2023, followed by a further seven months’ ageing on lees in concrete tulip.
